Cazuela

Yesterday, I hv no idea what to cook & malas also lah...I asked my hubby what he want to eat, then he requested Cazuela - chilean food. Akak sonok ler...cazuela maid akak bole masak...akak tak yah masak yeyyy...yeyyy...Here I would like to share the cazuela recipe - simple to cook.

Chicken Cazuela Recipe

2 chicken legs – cut into 2
4 potato – peeled cut into 2
4 pieces pumpkin – about 1” thick
1 pepper bell – seeded, cut into 1” strips
2 cobs corn – cut into
½ cup frozen peas }
½ cup frozen corns } or 1 cup of mixed vegetable
1 carrot - sherred
½ cup rice
½ tsp dried oregano
½ tsp cumin powder
¼ tsp garlic powder – can be replaced w/ chopped garlic 1 large onion – cut into 8 pieces
1 tbsp oil
1 chicken cube
1 cup minced parsley
Salt & pepper

1.Heat the oil over a medium heat, sauté the chicken for 2-3 minutes. Add the onion, garlic, cumin, and oregano; cook, stirring, 3 minutes more. Then transfer the chicken into the soup pot.

2. Add water , chicken cube and salt, and bring to a boil over high heat for about 15 mins then add corn, potato, pumpkin and pepper bell, simmered until the vegetable tender but still in shape.

3. Then add rice & mix vege, simmered about 20 mins until the rice cooked. Add parsley, season with slat & pepper. Simmer, stir occasionally for about 5-7 mins.

4. Divide the chicken and vegetables evenly into deep soup plates, and cover with the flavorful broth. Serve at once.


** you can also use only mix/frozen vegetable. Zucchini and French green beans also can be use- cut into small chunks. Can use any meat u like - kalau guna daging kena rebus lama skitt takut liat.
